Arugula salad with pine nuts

Pine nuts are ingredients in many light and healthy dishes, such as this Arugula salad with shrimps. This recipe combines health benefits of Siberian pine nuts with health benefits of the Italian arugula.

For 4 portions of the Arugula salad with shrimps and pine nuts, you will need the following ingredients:

  • 100 g fresh arugula (rucola) leaves, rinsed and dried
  • 400 g cherry tomatoes, halved
  • 20 raw shrimps
  • 2 avocados – peeled, pitted and sliced
  • 4 soup spoons of Siberian pine nuts
  • 50 g parmesan cheese
  • 100 ml olive oil (50 ml for pan-frying shrimps and 50 ml for salad dressing)
  • 1 soup spoon of balsamic vinegar
  • salt and pepper to taste

Preparation method:

  • Shell and devein shrimps. Heat a pan over medium-high heat, add 50 ml olive oil when the pan is hot and pan-fry shrimps
  • Divide arugula, halved cherry tomatoes, avocado slices and fried shrimps onto 4 plates
  • Season with olive oil, balsamic vinegar, salt and pepper
  • Top with rasped parmesan cheese and pine nuts
  • Your Arugula salad is ready to serve.
